Penne with Cherry Tomatoes and Burrata


This dish is both fun and easy to make.

It is perfect for taking to work for lunch simply as it tastes amazing — hot or cold.

To replicate: Boil water with salt and add one box of penne and cook until the noodles are al dente.

Then, in a separate bowl, mix together two and a half pounds of halved cherry tomatoes along with two table spoons of minced red onion with one teaspoon of red pepper flakes, and finally one and a half tea spoons of salt.

Next, add two teaspoons of red wine vinegar.

Our next step is straining the pasta and placing it in a larger pot. Mix the contents of the other bowl in with the pasta then top with burrata, basil, and green onions. Finally, season the dish with salt, pepper, and red pepper flakes.
