I hope everyone is enjoying the nice weather. Personally, if the sun is out I’m in a much better mood…
Especially because I like to eat outside — like I did this weekend at Corinne!
I had a fucking amazing time at Corinne. To be honest, I would rate my experience a 10 out of 10 in almost every way.
To start, I will say that I like the atmosphere. Corinne is located in the AC Hotel which is very upscale and nice.
The staff were very friendly and attentive. Our waitress recommended a drink to me that wasn’t even a part of the cocktail menu. It was called ‘the last word’.
It’s a gin-based prohibition era cocktail with green chartreuse, lime, and maraschino liqueur.
If you are a gin lover I would most definitely recommend you ask your bar tender to make you this cocktail.
One thing that really stood out to me at Corinne was the appetizers.
We got the Spicy Tuna Bruschetta and the Burrata.
The bruschetta was basically just tuna avocado toast with some sort of incredibly yummy clementine sauce on it.
It was mouth watering. Like so fucking good…
To die for some might say…
It only came with two pieces, but I could’ve eaten way more.
The burrata was delicious as well and it came with apricot mostarda and laws whiskey honey drizzled over it.
For dinner, I ordered the Scallops.
It was really hard to choose between ordering the scallops or the salmon.
I ended up trying a bite of the salmon off of my friends plate and while it was delicious and all, I was very glad I went with the scallops.
A lot of restaurants do not know how to do scallops properly. If scallops are tough, they aren’t good. These, however, were seared beautifully. So golden, buttery, and melty in your mouth.
I am excited for my brunch reservation at Corinne this Saturday morning.
All I have to say is if you live in Denver go to Corinne.
