Buffalo Cauliflower Bites

I have spent the past couple of months perfecting this recipe.

All of the ones I have found online and in cookbooks are slightly different, so I did some trial and error to find out what makes them the best.

These cauliflower bites make for a wonderful snack or appetizer, making them my new go-to when I get hungry mid-day and don’t feel quite like eating a full on meal.

For this recipe you will need:

1/2 cup of extra virgin olive oil, 1 cup of buffalo sauce (of your choice), 1/4 cup of your favorite hot sauce, 1 head of cauliflower (cut into florets), 2 cups of Panko bread crumbs, 1/2 cup of parmesan cheese (grated), 1 teaspoon of garlic powder, 2 teaspoons of black pepper, and 2 teaspoons of paprika.

Preheat your oven to 400°F and line a baking sheet with parchment paper. If you do not have parchment paper, that’s okay! Simply put a little oil on the pan to prevent it from sticking.

Put your cauliflower florets in a large bowl and add the olive oil, buffalo sauce, hot sauce, pepper, garlic powder, paprika and a pinch of salt. Begin tossing it till it’s thoroughly coated in the sauce.

In a small bowl, combine the bread crumbs and the parmesan. Dredge the cauliflower bites through the mix and place them on the baking sheet.

Roast for about 20 minutes. Take them out, flip them over, and put them back in for another 10-15 min.

Take them out and enjoy with blue cheese or ranch dressing!
