This week, I am going to share with you a recipe for broccoli cheese fritters.
This recipe is a great option to use as an appetizer, or even just a tasty snack.
For this recipe, you will need: 4 cups of broccoli florets, 2 large eggs (lightly beaten), 1/2 cup of white flour, 1/2 cup of cheddar (grated), a pinch of red pepper flakes, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, 3 tablespoons of olive oil, and chipotle mayo.
Start by filling a skillet (or sauce pan) with one inch of water.
Once simmering, add the broccoli.
Steam for 5 minutes until its bright green, then strain it.
In a large bowl mix together the egg, flour, cheese, red pepper, garlic powder, salt, and black pepper.
Mash the soft broccoli into the mixture.
You almost want to form into balls, but a little bit more flat so they cook through better.
Heat a skillet with the olive oil in it .
Once the oil begins to glisten add the fritters in and cook for about 3 minutes on each side until they are brown and crispy.
Serve with chipotle mayo and enjoy!
