It’s Hot Dish Honey here to share a Meatless Monday recipe with all of you!
This is a favorite in my house.
It’s light and healthy while also being satisfying and filling.
It’s also so easy to make.
Really, all you need is a can or two of black beans depending on how many people you’re serving.
You will also need a butternut squash as well as some tostada shells.
I like to make this meal even easier by grabbing pre-chopped squash from the frozen isle at the grocery store.
For toppings I like to use cotija cheese, avocado, cilantro, corn, pickled jalapeno and onions, red and green salsa, and green onion.
Now, all you have to do is heat up the black beans in a small pot.
The squash just needs to thaw out a little bit, then you can cook it in a skillet over medium heat with a little bit of olive oil till its soft and can be mashed up and spread on the tostada shell.
Put the black beans and the toppings on, and you’re good to go!
Well ladies and gentlemen, that’s how you make black bean and squash tostadas.
