Cheat meal of the week.

As you all know, eating healthy is very important to me. But I do think you should allow yourself a cheat meal every now and then. I’ve been eating very healthy this week and exercising a lot so I wanted to reward myself by making something with lots of cheese on it.

The cheat meal I decided on was a prosciutto puff pastry pizza. And I know what you’re thinking… “What the fuck is that?”. I’m not exactly sure who came up with it but I found this strange concoction in a book called Everyday Dinners by Jessica Merchant. This calorie filled meal is honestly quite simple to make. Preheat your oven to 400 degrees, lay a sheet of puff pastry down on a baking sheet, spread pesto on it, casually arrange prosciutto and mozzarella slices on top of it, then either chop or smash a half cup of pistachios and sprinkle it on your pizza. Slide it on into the oven and wait about 20-25 minutes, then take it out, let it cool, and enjoy!
