Burrito Bowl Bento

Bento is usually a single person meal either take-out or home-packed originating from Japan. One of the biggest appeals of bento is that it comes in a cute little box! Traditional bento boxes usually have things like noodles, rice, meat or fish of some sort.

I’d like to announce that starting today I will be releasing a different bento box every week on Wednesday mornings. This week, instead of doing a more traditional bento box to start out this series, I decided to mix things up and do a very fun and simple bento meal that’s easy as hell. A burrito bowl bento box! The main compartment on the box had black beans, white rice, corn, and tomato. I wanted to make sure that it wasn’t too boring so I made guacamole either to mix into the bowl or to eat on the side with chips. I also included sour cream and a lime on the side. My guacamole is really easy to make. I just mash up an avocado with fresh lime juice, garlic powder, cumin, and a red onion. Once all these ingredients are in place you can enjoy a simple and delicious lunch!
